Zubrowka is one of the most recognisable names in Polish vodka — the Bison Grass expression, with its blade of hierochloe odorata and distinctive pale green tint, has been a staple of the global spirits market for decades. Czarna, meaning "black" in Polish, represents a deliberate departure from that botanical identity. Where the original Zubrowka derives its character from the addition of bison grass, Czarna takes its personality from a different source entirely: filtration through charcoal made from oak grown in the Bialowieza forest, the ancient woodland that straddles the Polish-Belarusian border and serves as one of Europe's last primeval forests.
This is a clever piece of product design — using the Zubrowka brand's association with Bialowieza to anchor a different style of vodka in the same geographical and cultural territory. The forest provides both the bison grass for the original and the oak charcoal for Czarna, creating a coherent family of spirits united by provenance rather than flavour profile.
Tasting Notes
The nose presents clean grain with subtle oak char, light vanilla, and a whisper of dark chocolate — the charcoal filtration making its presence felt in a restrained, complementary manner rather than dominating the profile. On the palate, Czarna is crisp and clean, with a smooth wheat body and gentle oakiness that adds a dimension of complexity absent from most standard wheat vodkas at this price point. A faint mineral character provides additional interest, and the overall impression is of a well-structured, versatile spirit equally at home in a Martini as in a simple soda pour.
The finish is medium in length, clean and dry, with a trace of smoky oak that lingers pleasantly. The charcoal filtration has done its work with admirable subtlety — adding character rather than flavour, complexity rather than complication.
Verdict
Zubrowka Czarna is a well-made Polish wheat vodka that offers more character than its price point might suggest. The Bialowieza oak charcoal filtration adds a subtle but perceptible dimension that distinguishes it from the mass-market wheat vodkas against which it competes. Excellent value and thoroughly versatile.
