Production
Wheat, rye, and barley are blended, fermented, and triple-distilled in the distillery's copper pot stills. The wheat contributes softness and cream, the rye adds spice and pepper, and the barley provides a malty richness that is unusual in vodka production. The grain-to-glass approach means that every stage of production — from grain selection through fermentation to distillation — is controlled on-site, allowing precise management of the flavour balance. Charcoal filtration smooths the spirit while preserving the multi-grain character.
Tasting Notes
The nose is complex — wheat softness, rye pepper, and barley maltiness combine in an aromatic profile that is more reminiscent of a blended whisky than a typical vodka, accented by a gentle citrus note. On the palate, the vodka is full-flavoured and textured, with wheat cream, rye spice, barley malt, and a warming multi-grain complexity that develops across the palate. This is a vodka with genuine character — a cocktail spirit of real substance. The finish is medium-long, warm and complex with lingering grain and a clean peppery close.
The Serve
The multi-grain complexity makes Dockyard an excellent Martini vodka — the grain character provides structural depth that elevates the cocktail. It also works well in a Boulevardier variation (vodka, sweet vermouth, Campari), where its malty richness stands up to the bitter and sweet elements.
