Vault Aperitivo has produced one of the more genuinely terroir-driven vodkas available on the British market. Chalk & Rain takes its name from the two elements that define its character: chalk extracted from sixty-six metres beneath Saffron Grange Vineyard in Essex, and rainwater that has been filtered through that same ancient geological stratum. The concept of terroir — a term more commonly associated with wine than with spirits — is given tangible expression here, the mineral character of the Essex chalk bedrock contributing a distinctive quality to the finished vodka that is not available through any other means.
Production
British wheat provides the base, distilled four times to achieve clean purity before being blended with water filtered through the ancient chalk deposits beneath the vineyard. The chalk filtration is not merely a marketing claim — it contributes a genuine mineral quality to the spirit that is immediately apparent on the palate. Bottling at 41.6% ABV suggests that the precise strength is chosen to optimise the expression of the mineral character rather than being rounded to a conventional number.
Tasting Notes
The nose is delicate and distinctive — mineral chalk, soft wheat, lemon verbena, and a subtle wet-stone quality that is genuinely evocative of the geological provenance. On the palate, the vodka is silky smooth with pronounced mineral character, gentle wheat sweetness, white flower notes, and a crisp, chalky dryness that provides the spirit's most distinctive feature. The texture is beautifully smooth — the chalk filtration appears to contribute to the vodka's silky mouthfeel. The finish is long and clean with mineral chalk, a hint of white pepper, and an elegant, dry close.
The Serve
This is a vodka that rewards neat sipping — serve slightly chilled to appreciate the mineral complexity. In a Martini, the chalky dryness provides a structural quality that enhances the cocktail's elegance. It also pairs remarkably well with oysters, the mineral character echoing the brininess of the shellfish.
Verdict
Vault Chalk & Rain is one of the more interesting and genuinely terroir-driven vodkas available on the British market. The mineral character is real and distinctive, the quality is high, and the price is fair for what is genuinely a premium product.
