Hali'imaile Distillery in Makawao, Maui, produces one of the more unusual vodkas available on the international market — a spirit distilled entirely from Maui Gold pineapples, the premium variety grown on the island's volcanic slopes. The use of pineapple as a base material is not a marketing gimmick but a reflection of the distillery's location and the agricultural heritage of Maui, where pineapple cultivation has been a cornerstone of the economy since the late nineteenth century. The resulting vodka carries a tropical character that is fundamentally different from anything achievable with grain, potato, or grape bases.
Production
Maui Gold pineapples are fermented and triple-distilled at the Hali'imaile Distillery, a process that transforms the fruit's natural sugars into a clean spirit while preserving subtle tropical notes that survive the distillation process. The vodka is charcoal-filtered and bottled at 40% ABV. The 75cl bottle at under thirty pounds represents fair value for a vodka of genuine provenance and unusual character.
Tasting Notes
The nose is clean and subtly tropical — pineapple is present but restrained, accompanied by coconut husk and a gentle vanilla sweetness. On the palate, the vodka is smooth and distinctively tropical, with pineapple sweetness, a touch of caramel, gentle spice, and a clean mineral quality. The pineapple base provides a unique texture — slightly different from grain or potato vodkas in a manner that is difficult to articulate but immediately recognisable. The finish is medium, clean and slightly sweet with tropical fruit lingering and a warming close.
The Serve
The tropical character makes Pau Maui a natural base for tiki-adjacent cocktails — a Pina Colada made with this vodka and fresh pineapple juice is a revelation. It also works beautifully in a Vodka Sour with passion fruit, or simply over ice with coconut water for a Hawaiian-inspired long drink.
