From Caipirinha to Caipiroska
The original Caipirinha is Brazil's national cocktail, made with cachaça — a sugarcane spirit that's rougher and funkier than vodka. The Caipiroska swaps cachaça for vodka, producing a cleaner, more approachable version that's become a global bar staple. Purists may object, but the vodka version outsells the original in most countries outside Brazil.
The Muddle
Don't be gentle. The lime wedges need to be properly muddled — press and twist to extract not just the juice but the essential oils from the skin. Those oils are where the real lime flavour lives. Under-muddling produces a weak, watery drink. Over-muddling isn't really possible here — go hard.
Sugar: Granulated vs Syrup
Traditionalists use granulated or caster sugar, muddled with the lime so the sugar crystals act as an abrasive, helping to break down the fruit. Sugar syrup gives a more even sweetness throughout the drink. Both approaches are valid — the muddled sugar version has a slight textural roughness that some prefer.
