Eight Lands takes its name from the eight parishes that surround the Glenrinnes estate in Speyside, Scotland — a region whose association with distilling is, of course, primarily whisky-related, but whose water sources, agricultural heritage, and distilling infrastructure are no less suited to the production of premium vodka. The distillery's decision to produce an organic vodka from a two-stage fermentation of both barley and wheat represents a thoughtful and distinctive approach to a category that Scotland has only recently begun to take seriously.
The organic certification is genuine and comprehensive — the grain is sourced from certified organic farms, the production process eschews synthetic additives, and the spirit is bottled at a generous 42% ABV, a strength that affords the vodka a little more body and flavour intensity than the standard 40%. This is vodka-making with conviction, and the result rewards that philosophical commitment.
Production
The two-stage fermentation process — barley and wheat fermented separately before blending — allows the distillery to combine the creamy richness of barley with the clean, neutral sweetness of wheat. Distillation occurs three times, a process sufficient to achieve purity while retaining the aromatic congeners that give Eight Lands its distinctive marzipan character. Highland water of exceptional softness is used for dilution, and the spirit is carbon-filtered with restraint to preserve its natural personality.
Tasting Notes
The nose is immediately appealing — sweet marzipan and vanilla pods dominate, with soft barley grain and a gentle heathery floral quality that speaks of the spirit's Scottish provenance. On the palate, the vodka is rich and creamy with marzipan sweetness, toasted almond, honey, and a subtle cereal backbone that provides structure. The 42% ABV gives the spirit a satisfying weight and presence that lower-strength competitors often lack. The finish is medium-long with lingering almond, gentle warmth, and a clean mineral fade.
Verdict
Eight Lands earns a confident eight out of ten — a genuinely distinctive organic vodka that demonstrates Scotland's capacity to produce spirits of real character beyond its whisky heartland. The marzipan-led profile is unusual and appealing, the texture is excellent, and the price represents fair value for an organic spirit of this quality. A vodka that deserves wider recognition.
