Heritage & Distillery
Baller Chilli Bacon Vodka is a product that invites strong opinions — a spirit that deliberately courts controversy by combining two of the most assertive flavouring ingredients in the culinary lexicon. Produced by Doghouse Distillery in Ireland, it is a vodka for a very specific occasion and a very specific serve, and within those parameters it is executed with commitment and conviction.
Tasting Notes
The nose is bold and savoury — smoky bacon, chilli heat, a touch of paprika, and an underlying grain sweetness that provides a counterpoint to the aggressive savoury notes. On the palate, the vodka is assertive and meaty with genuine smoky bacon character, chilli warmth, savoury umami, and a slight sweetness that rounds the edges. This is a polarising spirit — those who appreciate bold, savoury flavours will find much to enjoy, while those who prefer their vodka clean and neutral will find it bewildering. The finish is medium with lingering smoke, chilli heat, and a savoury, bacon-fat warmth.
The Serve
There is really only one serve for Baller Chilli Bacon Vodka, and that is the Bloody Mary — where the smoky, spicy, savoury character provides a depth and complexity that would otherwise require the addition of multiple ingredients. A Bloody Mary made with this vodka is a different drink entirely from one made with a conventional spirit, and this reviewer will grudgingly admit that it is a better one.
Verdict
At six out of ten as a general vodka — but considerably higher as a Bloody Mary ingredient — Baller Chilli Bacon is a niche product that excels within its niche. It is not a vodka for all occasions or all palates, but for the specific purpose for which it was designed, it is genuinely effective. A divisive spirit that rewards the open-minded.
